VANILLA-GLAZED GINGERBREAD DOUGHNUTS (GLUTEN-FREE) by Lindsey | Dolly and Oatmeal


holiday baking has commenced! it’s always a fine line of when to actually start. if i had it my way, i would be baking all month long. but for the sake of nutrition and my sanity, i’m keeping it simple (especially this year). while we’re not huge on sweets in our house, at least as a norm. we all love the occasional baked good, and amesy is an equal opportunity cookie-lover. but i wanted to switch it up a little and make these delicious and festive gingerbread-spiced doughnuts. the first time i made them, amesy was astonished that his “cake” was in a different shape than what he was used to. aside from saying the doughnuts were delicious, he said: “mommy, i’m eating a circle!”. so if nothing else, dessert can become a lesson in shapes as well ;)

in all seriousness though, i do endeavor to make baked goods as wholesome as i can. these doughnuts take a blend of whole grain gluten-free flours, providing some nutrients. a blend of coconut sugar and monkfruit sweetener, lowering the overall amount of sugar. and Thrive algae oil, a better-for-you, flavorless cooking oil that’s super versatile so i love using it when i’m baking and cooking. my favorite reason for using it in baked goods is that unlike coconut oil, it doesn’t interfere with the flavor of your treat. unlike most other flavorless oils though, algae oil is high in healthy monounsaturated fat, and lower in saturated fat, making it my ultimate go-to. plus, i love that it’s so widely available at grocery stores nationwide, and also online making it available to everyone.

vanilla-glazed gingerbread doughnuts | gf & df

-these are best the day of. if you’re making them in advance, bake the doughnuts, store them at room temp covered with parchment. before serving, dip them in the glaze, then serve.

| makes 12 doughnuts |

dry

  • 3/4 cup brown rice flour

  • 1/2 cup (gluten-free) oat flour

  • 1/4 cup arrowroot flour

  • 1/3 cup monkfruit sweetener

  • 1/3 cup coconut sugar

  • 1 teaspoon baking powder

  • 1/4 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1 teaspoon ground cinnamon

  • 1/2 teaspoon ground ginger

  • pinch allspice

  • pinch ground cloves

wet

  • 2 large pasture-raised eggs, at room temp

  • 1/2 cup unsweetened applesauce

  • 1/4 cup unsweetened almond milk, at room temp

  • 1/4 cup Thrive algae oil

  • 1 teaspoon pure vanilla extract

glaze

  • 1 1/2 cups powdered sugar

  • 2 (plus more, if needed) tablespoons unsweetened almond milk

  • 1/2 teaspoon pure vanilla extract

  • chopped pistachios, for garnish



method

  1. preheat oven to 350°F and oil a doughnut pan.

  2. in a large bowl, whisk together the dry ingredients. in a separate bowl, whisk together the wet ingredients. add the dry ingredients to the wet using a whisk, a little at a time until everything is thoroughly combined.

  3. pour batter into a batter bowl, liquid measuring cup with a spout, or a large plastic ziplock bag with one edge snipped off. carefully fill each doughnut cavity 3/4 of the way with the batter. bake doughnuts until a cake tester or toothpick inserted into the center of a doughnut comes out clean, 12-15 minutes.

  4. while doughnuts are cooling, make the glaze. sift the powdered sugar into a large shallow bowl. whisk in 2 tablespoons milk, and vanilla until you have a fluid glaze (add more almond milk if needed). once the doughnuts have cooled completely, remove them from the pan; then dip the tops into the glaze (for a thicker glaze, dip them again), and sprinkle with chopped pistachios.

  5. serve immediately.

i’ve been meaning to share this post for weeks now. amesy turned 3 years old (!!!) at the end of september. we had a small gathering with family - there was a little dinosaur egg hunt (naturally), a cardboard castle, dinosaur masks, water painting, shake shack burgers and fries, and this chocolate chip cookie cake! amesy is an equal opportunity cookie lover, but his absolute favorite is chocolate chip. naturally, a chocolate chip cookie cake was where my mind went. i’m still not sure where this last year went. while it was one of the most emotional and trying in some ways, it was also such a special year of getting to know my growing little boy as more than a baby, but a little human with interests and ideas, and questions, and curiosities.

i’ve been making amesy’s cakes for 3 years now, and each year they’ve inevitably had a dinosaur theme because, well, he loves dinosaurs! i’ve tried to switch it up each year. for his 1st birthday i went with more dinosaur decorations on the cake - cookie “dirt”, teeny plastic dinos and tropical trees. his 2nd birthday, i made cut-out marzipan dinosaurs to place on the top and sides of his cake. and this 3rd birthday, i opted for the simplest amazon-purchased dinosaur cake topper because i decided to give myself some relief with having my newborn joey and all. and each year i've tried to keep the cake as low in sugar as i possibly could without it tasting like “healthy” cake. when it comes to sugar i usually stick to a few sweeteners: coconut sugar, monkfruit sweetener (both the granulated and the powdered), maple syrup, honey, and stevia. those are what i generally stick to for kids cakes. and just so everyone can partake in the cake eating, i make them gluten-and-dairy-free as well.

in my haze as a mom to 2 kids, one being a newborn, i opted to use google to find myself a chocolate chip cookie cake recipe. the recipe i landed on was grain-free, gluten-free, dairy-free cake that looked great! i made a few minor adjustments - using almond butter instead of tahini, swapping out some of the coconut sugar for monkfruit sweetener, and omitting almond extract. i also used store-bought vegan icing, because, if i’m honest, i hate making frosting, and i wanted to cut the time down since i was making the cake while joey napped which didn’t give me much time. i also made the cake layers a couple days ahead of time, and frosted and assembled the cake the day of. this makes it easier to frost (pro-tip: when your cake layers are cold you get less crumbs in the frosting). then i took it out of the fridge about 1 1/2 hours before i was ready to serve it. it couldn’t have been more of a crowd (and amesy) pleaser :)



method

  1. preheat oven to 350°F. oil three 6-inch round cake pans, and line the bottoms with parchment rounds.

  2. in a large bowl, whisk together all of the wet ingredients until combined.

  3. in a separate bowl, whisk together the dry ingredients. using a rubber spatula, add the dry ingredients to the wet a little at a time until fully combined and the batter is smooth. fold in the chocolate chips.

  4. divide the batter evenly between the 3 pans, using your spatula to smooth the tops. bake for 18-25 minutes, until a cake tester inserted into the center comes out clean. remove cakes and set them on a cooling rack. once they are completely cool wrap them tight in cling wrap and refrigerate for at least 12 hours (or overnight).

  5. the day of, frost cake one layer at a time. then lightly frost the top and sides of cake. refrigerate until 1 hour before serving. then slice and serve!

  • 4 large eggs, at room temperature

  • 1 cup monkfruit sweetener

  • 1/2 cup coconut sugar

  • 2 cups super fine blanched almond flour

there’s nothing more fun to me than cooking with friends and family on a long weekend. so, i’ve rounded up a combination of recipes that are perfect for easy-breezy summer weekends. one’s that are spent at the beach, in the backyard, at the park for a picnic - you name it, there’s a recipe for that! we have sides, mains, a cold slurp-able recipe, all things potatoes, summery sweets, and a mini section dedicated to grilling. so i feel like whatever you’re looking for you’ll find something here that hopefully will inspire you to make it or some version of it. wishing everyone stateside a lovely long weekend! here’s to it officially being summer! 💛


to start:

golden sunflower gazpacho - an impressive summer sipper. the great thing about gazpacho is that it’s great to make ahead of time (up to 2 days before you’re ready to serve it), and it’s cold for hot summer days! but i love this gazpacho mostly because at its base there are sunflower seeds that are blended up with the summer vegetables, making it a bit more creamy than a traditional gazpacho. plus, it’s vibrant yellow color screams summer.

bean-less sunflower seed & garlic hummus - summer isn’t summer without hummus as far as i’m concerned. neither is a long lazy weekend. this hummus is a bean-less iteration where we used soaked sunflower seeds in lieu of chickpeas. the rest of the ingredients are typical to traditional hummus: tahini, garlic, lemon juice, salt & pepper, and water. i like to jazz it up on occasion if i can using black garlic (if you have it or can find it, i highly recommend it!), or 3-4 drained shallots and 4-5 garlic drained cloves from this garlic, herb & shallot confit with some of the infused oil to top the hummus (as shown above). you really can’t go wrong with this recipe.


as a main:

niçoise sandwiches - these sandwiches are great for a day at the beach, or a picnic in the park. they pack up easy, and each component can be prepared ahead of time making assembling them on the day of that much easier. they’ve got fresh crunchy vegetables, a dreamy shallot-garlic-balsamic vinaigrette, and crunchy bread! what’s not to love?

sprouted quinoa sliders w/ garlicky cucumber slaw - these are a great alternative to your typical summer bbq meal and they’re wonderful for vegetarians or vegans. they’re made with sprouted quinoa, held together by mashed sweet potato and a bit of gluten-free breadcrumbs. the original recipe calls for ramps, but since they’re season has passed, you could easily use green onions, or leeks in their place. plus, these patties can be prepared ahead of time and then cooked the day of.

summer beet tacos w/ beet green salsa verde & spicy pickled onions - another vegetarian and vegan friendly main dish. these tacos are colorful, fun, and taste like a dream. yet another make-ahead-friendly dish, and could even be served as an appetizer on a small tortilla if you like. while beets can often fall flat because of their earthy flavor, these are jazzed up with a punchy green salsa, sharp pickled onions, creamy avocado, and good bit of lime juice.


to bake:

raspberry-currant yogurt crumble cake - to date one of my favorite ways to use summer fruit. this cake is loaded with fresh summer berries and currants. but you could easily use whatever fruit you like - be it cherries, peaches, blueberries, or some combination. it’s light and sweet, and that bit of spiced crumble topping just takes it to another delicious place.

cilantro-watermelon granita w/ mint - by far one of the easiest desserts you can make, and it’s impressive to boot! all you do is blend all the ingredients in a blender or food processor, freeze the mixture for a total of about 6 hours, and there you basically have summer in dessert form! my favorite way to serve these is in a see-through cup and, if you can find some, garnishing the tops with violet mint flowers, or even just small mint stems.

red berry blondies - for anyone who doesn’t like to make pie, but loves berries in dessert - this one’s for you! while blondies are the non-chocolate cousin to brownies, these are just as rich and dare i say a bit gooey. so be prepared for a heavier dessert with this one. the berries lighten them up a bit and definitely work to make these the ultimate summer-friendly dessert.


all things potatoes:

crunchy smashed potato salad w/ garlicky yogurt vinaigrette & pickled onions - i know i shouldn’t play favorites, but if there’s one thing you make on this list, this one’s it! it has everything you want and need in a potato salad: crunchy, salty, tender potato flecks, creamy yogurt-y dressing, and super punchy pink pickled onions! there’s nothing you or your potential guests won’t love about this potato salad!

warm fingerling potatoes w/ garlic-turmeric sauce - another potato salad mash-up with tons of flavor! the garlic-turmeric sauce is a favorite around here and is sure to add that extra something to just about anything it touches. add in some shaved red cabbage and you have yourself the perfect crunch to compliment everything else going on here.

chickpea flatbread w/ new potatoes & fresh basil - this has been one of the most popular recipes on my site for years now, and for good reason! easy homemade flatbread - check! crunchy potatoes - check! fresh summer garlic & herbs - check! there are also mushrooms for a bit of earthiness, that just adds to the flavor here. this flatbread is perfect to serve on the side to any main, or as an appetizer. either way you’re in for a treat!


to toss:

cherry panzanella - this salad is another favorite. it’s got everything you could ever want: cherries, fresh crunchy greens, heirloom tomatoes, fresh summer herbs, a punchy dressing, and crunchy bread bits! enough said! just go ahead and make it ;)

mellow melon salad - here we have a leaf-less salad composed of summer melons, julienned summer squash, grilled corn, tomatoes, and sweet shaved melon wedges. the colors in this salad scream summer, and so does its flavor - sweet and savory all at the same time!


to grill:

hickory smoked salmon skewers - these salmon skewers are one of my favorite recipes to date. the salmon is marinated in a subtle, but flavorful mustard-vinegar-based bbq sauce, then lightly grilled with hickory, giving them that bbq vibe while not completely overpowering them with smoke. minus the marinating and heating of your grill, these are a breeze to make - about 10 minutes of cooking time total! serve them over some lightly dressed greens and your meal is good to go!

grilled summer pizza w/ garden pesto & balsamic caramelized onions - if you have a bit of extra time, and want to challenge yourself beyond the limitations of your oven, then make grilled pizza! the flavor is what really takes it up a notch, especially if you use a charcoal grill. there is a learning curve here if you are using a charcoal grill, but nothing that’s too intimidating. there’s nothing better than pizza on a long weekend ;)
